A speedy and altogether totally different fish supper with a success of chilli and herbs
Drain the noodles and divide them between 4 bowls. Add the chilli-herb fish items, scatter with the chopped peanuts and serve
2 tsp floor turmeric
3cm piece of ginger, peeled and grated
1 tsp caster sugar
2 tbsp fish sauce
500g sustainable cod loin, minimize into chunks
100g vermicelli rice noodles
60ml sunflower oil
1 crimson chilli, finely chopped
massive handful of dill fronds
massive handful of coriander leaves
bunch of spring onions, shredded
2-Three tbsp unsalted roasted peanuts, chopped
- Combine the turmeric with the ginger, caster sugar and fish sauce in a shallow dish to make a fast marinade. Toss the fish within the marinade and put aside for 5-10 minutes whilst you put together the vermicelli noodles.
- Soak the noodles in boiling water for roughly 10 minutes.
- In the meantime, warmth the oil in a wok or frying pan and fry the fish over a excessive warmth for Three-Four minutes till simply cooked. Flip the fish fastidiously so it doesn’t break. Take away from the warmth and add the chilli, dill, coriander and spring onions and flippantly toss collectively.
